A Victory blast chiller is a kitchen essential for swiftly reducing product temperatures to safe levels. These units boast stainless steel interiors and exteriors, along with a central floor drain for hassle-free cleanup. Each door, made of stainless steel, features a stay-open function for easy loading, a snap-in gasket, and an anti-condensation perimeter heater around the door opening.Equipped with an electronic control and LCD color display, these blast chillers offer precise control over chilling cycles. They offer one-touch hard and soft automatic blast chilling or shock freezing cycles, based on either core probe temperature or timed cycles. Automatic core probe recognition and conservation mode at cycle's end are included. HACCP alarms are displayed and recorded, with a real-time clock providing date, time, and duration. Printers are standard.With a capacity for 99 total cycles, including 68 factory pre-set recipes and up to 31 custom programs, these units allow for adjustable evaporator fan speed control during the blast chilling cycle. A micro-switch control shuts off the evaporator fan and compressor when the door is opened.The self-contained refrigeration system uses R404a refrigerant and features a hermetically sealed compressor with overload protection. A high flow rate fan-equipped evaporator ensures maximum cooling efficiency, while indirect air flow ensures top product quality. These blast chillers can reduce product temperatures from 194°F to 37°F in 90 minutes, and from 194°F to 0°F in 240 minutes.
